Cut the meat into several pieces (if the piece is large) and put it in the water for an hour. Then rinse and repeat the process, changing the water.

If the recipe for the dish you have in mind allows, put the meat in the third water and bring to a boil. Afterwards, if you are not at all sure about the quality of the meat, rinse it again in salted water.
